What's not to love about a Ding Dong? They are called by many different names, but a cupcake by any other name is just as tasty. Chocolate cake with a happy filling and a rich frosting to seal it in. Last week I walked by a vending machine with one last pair of these cupcakes dangling between its resting place and the chute people happily get them from. Justice had to be delivered to all snack cake lovers everywhere.

 To make your very own ding dongs at home you need these items.

Cake:
1 box of devil's food cake mix
3 eggs
1 stick of butter, melted
1 cup of milk

Filling:
Marshmallow creme- 1 7 oz container

Frosting
1 Cup of milk chocolate chips
1/4 Cup of milk
























Mix cake mix, butter, eggs and milk together and spread in a 9x13 pan.

Bake the cake for 30 to 35 minutes, or until a cake tester comes out clean. Wait for the cake to cool before cutting out the shapes. No really, you will be sorry!




Then, the cakes need to be cut out. You could just make cupcakes, but shapes are fun too! I used a heart shape, a cupcake shape and a standard circle cutter. Feel free to experiment! Oh, and save the scraps for snacking or cake balls.


 With a serrated knife cut out a shallow, but wide hole in the bottom of each cake. Don't worry if it's not pretty, melted chocolate fixes most things. Save the little "hat" from each one.

Fill the cakes with the marshmallow creme. I warmed mine up to make it a bit easier to pipe into the cakes. Don't overfill them, as tempting as it may be.

Once they have been filled with the marshmallow creme, put the hats back on and turn them right side up.

Melt the chocoalte and milk together until they are a pourable consistency. Then, spoon the chocolate over each of the cakes.



I piped a little swirl of the marshmallow creme to give it a final touch.



Serve the cakes with coffee, or a nice glass of milk. If there are any leftovers, cover them tightly and store in the refrigerator.

  2. Do it! I am not sure if mashmallow cream is gf, but the cake and topping parts should be easy.
